Pineapple Banana Muffins (Gluten and Dairy Free)

Pineapple Banana Muffins (Gluten and Dairy Free)



Serve 10

Approximate cooking time 35 minutes


2 bananas mashed

3 cups self-raising flour (Gluten Free)

½ cup desiccated coconut

½ cup honey

80g dairy free margarine

2 eggs

2 tbsp coconut milk (Maggie)

¼ cup water


  1. Preheat oven 160°C and line muffin pan with papers.
  2. Blend the banana, honey, coconut, margarine and eggs together.
  3. Add in flour and mix.
  4. Stir in milk.
  5. Spoon mixture into each muffin hole (3/4 full) bake in oven for 20 minutes.
  6. Cool on wire rack.
