Welcome to Mexican meal ideas for your menu.

These are simple to make and utilise the quick and easy pulled meat range from Hans. I have added a couple fun dessert ideas and the Mexican donuts are super easy to make and cook. As this photo shows there are lots of sides you can use to add variety to these meals.

Recipe- Mexican Donuts Nestle Milk Chocolate

Easy to make snack for morning tea.

Combine with Nestle milk chocolate to add a delicious chocolate sauce to dip in the donuts.

Makes: 30 donuts

Approximate cooking time: 1 hour

Ingredients:Mexican Donuts Nestle Milk Chocolate

3 cups of self-raising flour

125g caster sugar

2 eggs

1 cup milk

60g butter/margarine

10g Cinnamon

200g sugar

Oil for frying  (fill a pot with 80mm of oil) or use a fryer

 

Chocolate dipping sauce

6 tbsp arrowroot flour

3 cup milk

400g milk chocolate (Nestle)

Instructions:

  1. Mix together sugar and cinnamon in a shallow bowl and set aside
  2. In a bowl, combine flour and caster sugar
  3. Add in eggs, margarine and milk
  4. Mix together all ingredients until a thick batter is formed and butter/margarine is blended in
  5. Heat oil to frying temperature (pot or fryer)
  6. Drip teaspoons of mixture into hot oil
  7. Cook until golden brown – turning
  8. Drain on paper towel
  9. Toss through cinnamon sugar

To make sauce

  1. Melt chocolate in milk (keep a little milk to mix arrowroot)
  2. Add in arrowroot flour and stir until chocolate sauce thickens
  3. Serve with chocolate sauce and cream or ice cream

Recipe- Tex Mex Key Lime Tart Nestle & Bulla  

 

Serve 10

Approximate cooking time: 90 minutes

 

Ingredients:Tex Mex Key Lime Tart

380g biscuits crushed

125g of margarine

Filling

400g condensed milk (Nestle)

4 eggs

1 cup thicken cream (Bulla)

½ cup lime juice

Zest of two limes

Sliced lime to garnish

Instructions:

 

  1. Preheat oven to 190ᵒC and line a pie dish with aluminium foil
  2. Crush biscuits by putting them into a plastic bag and smashing them with a rolling pin into crumbs (or use a food processor)
  3. Add margarine and stir to combine
  4. Press the crumbs firmly into the bottom of pie dish and bake for 8 minutes – allow to cool for 30 minutes
  5. Place all the pie filling ingredients into a mixing bowl and using an electric mixer beat until well combined
  6. Pour over base
  7. Bake in oven for 30 minutes until set
  8. Garnish with extra slices of lime and serve with cream

Recipe- Hans Pull Pork Nachos 

Hans Pull Pork Nachos

Serve 10

Approximate cooking time: 15 minutes + 15 minutes melting cheese over top nachos

Ingredients:

20 ml oil

1 onion

1 kg of pulled pork (Hans)

850 g salsa sauce

1 cup of water

Bunch of fresh coriander

Instructions:

  1. In a pan, add oil and fry off onion until soft
  2. Add pulled pork
  3. Open salsa and add one cup of water
  4. Heat through
  5. Turn off heat and stir through coriander
  6. Serve with corn chips or wraps turned into corn chips

Recipe- Chicken Burritos Bowls Hans & Riviana

Serve 10

Approximate cooking time: 45 minutes

Ingredients:

50 ml oil

1 onion sliced

400g tomato canned and diced

Juice of one lime

2 tsp chilli power

2 tsp ground coriander

2 tsp ground cumin

500g pulled chicken (Hans)

2 cups black beans washed (Riviana)

1 green chilli sliced to garnish

Fresh coriander to garnish

Red capsicum sliced to garnish

1 cup rice

2 cup water

Instructions:

  1. Heat oil in pan
  2. Add onion and cook until soft
  3. Add in spices
  4. Add in tomato
  5. Add in chicken and black beans and stir through
  6. Cook rice until soft
  7. Add rice to dish
  8. Pour over sauce
  9. Top with green chilli, capsicum and coriander to garnish

Recipe- Chicken Enchiladas Hans, Riviana & Fonterra 

Ingredients:

50 ml oil

1 onion sliced

400g tomato canned and dicedchicken enchiladas

Juice of one lime

2 tsp chilli power

2 tsp ground coriander

2 tsp ground cumin

1 green chilli sliced

500 g pulled chicken (Hans)

2 cups black beans washed (Riviana)

Fresh coriander

Red capsicum

15 Tortilla (Goodman Fielder Helga’s)

2 cups mozzarella cheese (Fonterra)

Instructions:

  1. Heat oil in pan
  2. Add onion and cook until soft
  3. Add in spices
  4. Add in tomato
  5. Add in chicken and black beans and stir through
  6. Cook rice until soft
  7. Add rice to dish
  8. Pour over sauce
  9. Top with green chilli, capsicum and coriander to garnish
