This is a wonderful recipe which uses cannellini beans and natural stock concentrate. This recipe is suitable for vegetarians (vegan with no cheese) and the beans add protein to the dish.
Garnishing the dish with a little cheese will add extra protein and calcium.
This soup recipes uses the Massel Flavour Station concentrate, adding wonderful flavour with no additional salt required. Massel Flavour Station concentrates are all plant based, gluten free, free of common allergens and Fodmap approved. Making them an a perfect ingredient to use when making meals.
Both of these products can be used in a wide range of recipes.
2 tablespoons oil
1 onion sliced
2 carrots sliced
2 cloves garlic
800g canned tomatoes
2 tsp dried basil
1 tsp dried oregano
80 ml vegetable stock concentrate (Massel)
10 cups water
2 cup cannellini beans (Riviana)
120 g baby spinach
½ cup cheese (Fonterra)
