On May the 1st the International Dysphagia Diet Standards take effect. These standards are not mandatory but are going to be used across the industry.
The International Dysphagia Diet Standardisation initiative (IDDSI) was founded in 2013 with the goal of developing new global standardised terminology and definitions to describe texture modified foods and thickened liquids used for individuals with dysphagia of all ages, care settings and cultures.
After years of work and international collaboration has culminated in a final dysphagia diet framework consisting of a continuum of 8 levels (0-7). Levels are identified by numbers, text labels and colour coded as shown. The diagram is internationally recognised and food manufacturing companies are working to align themselves to these standards.
The colours of these new levels have been designed under the international framework for Red-Green colour blindness. Wall posters are available on IDDSI website.
