CR Kitchen With Riviana: Apple Slice and Apple & Ricotta Slice

Apple Slice

Beautiful slice for mid-meal snacks or perfect as a dessert served with custard or ice cream.

Approximate cooking time: 55 minutes

Serves: 20

Ingredients

Bottom base

200g margarine (butter)

½ cup caster sugar

1 cup plain flour

1 cup self-raising flour

Topping Capture1

100g margarine (butter)

¼ cup caster sugar

½ cup plain flour

½ cup self-raising flour

Filling

600g apple (diced apple Riviana)

4 tbsp of brown sugar

4 tsp cinnamon

 

Instructions

  1. Preheat oven to 180⁰C and line a 23×23 cake tin with baking paper (spring form pan)
  2. In a bowl, beat margarine and sugar together and then mix in plain and self-raising flour together
  3. Press into bottom of tin
  4. Add apple and spread over cinnamon
  5. Make up topping and evenly distribute over the apple (make all of the base and topping mixture together and use 2/3 to line the base)
  6. Finish by topping the slice with brown sugar and cinnamon
  7. Cook in the oven for about 35 minutes
  8. Leave slice to cook in the tin

Apple and Ricotta Slice

A beautiful slice that’s perfect as a between-meal snack or as a dessert. This slice is high in protein and calcium.

Approximate cooking time: 60 minutes

Serves: 20

Ingredients

Bottom base Capture2

200g margarine (butter)

½ cup caster sugar

2 eggs

1 ½  cups sifted plain flour

Filling

750 g of ricotta cheese

1/3 cup caster sugar

4 eggs

800g diced apple (Riviana)

Topping

125 g Cups flaked almonds

Instructions

  1. Preheat oven to 180⁰C and line a 23×23 cake tin with baking paper (spring form pan)
  2. In a bowl, cream together the margarine and sugar
  3. Add eggs gradually, beating thoroughly after each addition
  4. Add flour and mix together
  5. Spread mixture over the tin and cook for 15 minutes
  6. Beat the cheese and sugar together to make the filling
  7. Beat in eggs and mix well
  8. Stir through the apple
  9. Pour over the base and top with flaked almonds
  10. Cook for 40-60 minutes until the topping is set
  11. Cool in tin and refrigerate until completely cold
  12. Cut into slices
