With Christmas fast approaching, CR Kitchen has put together a menu of festive Christmas menu ideas. Below we have provided some fantastic lunch recipes you can use this festive season.


 

Recipes 

Preparing roast pork belly: 

Serve 20

Approximate 2 hours

Instructions:

  1. Score the (Hans) pork with a criss cross pattern
  2. Cook pork belly until crackling is crisp (1 hour)
  3. Rest pork for 10 minutes
  4. Slice and serve

Preparing plum sauce:

Serves 20

Approximate cooking time 20 minutes

Ingredients:

850 g can plums (Riviana)- drained

6 cups of water

¼ cup brown sugar

4 tbsps soy sauce

¼ cup cornflour + water

Instructions:

  1. In a saucepan, add plums (without juice).
  2. Add water, sugar and soy sauce.
  3. Allow to simmer for 15 minutes.
  4. Add cornflour to allow sauce to thicken.

Roast Pork Belly with Vegetable Recipe

 

Serves 1

Ingredients:

100g serve of pork belly (Hans)pork belly with vegetables

50g  plum sauce (Riviana)

100g Frozen mixed vegetables (Simplot)

25g Roasted cherry tomatoes

 Instructions:

  1. Slice pork.
  2. Heat vegetables in the microwave.
  3. Add roasted tomatoes.
  4. Serve with plum sauce.

100g rice salad

Chargrilled Chicken with Vegetable and Plum sauce Recipe

Serves 1chargrilled chicken

Ingredients:

M & J Chargilled Chicken Breast (M & J Chicken)

100 g Frozen vegetables (Simplot)

50g Plum sauce (Riviana)

25g Roasted cherry tomatoes

Instructions:

  1. Heat chicken up in the oven. M & J chicken comes frozen and only requires to be reheated.
  2. Microwave frozen vegetables.
  3. Roast off cherry tomatoes.
  4. Make plum sauce (recipe above).

Chargrilled Chicken with Salad Recipe

Serves 1

Ingredients:

M & J Chargrilled Chicken Breast (M & J Chicken)chargrilled chicken with salad

50g roasted carrot salad

100g rice salad

100g pasta salad

Instructions:

  1. Heat up chicken in oven
  2. Arrange on plate with salad
  3. M & J chicken comes frozen and only requires to be reheated

Pineapple Bacon Pasta Salad Recipe

Serves 20

Approximate cooking time 45 minutespineapple bacon pasta salad

Ingredients:

250g pasta

500g pineapple (Golden Circle)

375g bacon (Hans)

200g mix salad leaves (lettuce and carrot mix)

Snow pea sprouts to decorate

Dressing

4 tbsp Honey

½ cup olive oil

1 tbsp Dijon mustard

¼ cup water

Instructions:

  1. Heat water in saucepan and boil pasta until just cooked.
  2. Cook pineapple and then bacon.
  3. Arrange salad leaves in a bowl.
  4. Cook pasta according to directions, cool and mix through.
  5. Make up dressing and pour over.
  6. Top with snow pea sprouts.

Christmas Rice Salad Recipe

Serves 20

Approximate cooking time 45 minuteschristmas rice salad

Ingredients:

1.5 cups rice (Fortune)

1 cup dried cranberries (Trumps)

150g baby spinach

¾ cup flaked almond toasted

100g fetta crumbled

Dressing

4 tbsp Honey

½ cup olive oil

1 tbsp Dijon mustard

¼ cup water

Instructions:

  1. Cook rice until soft.
  2. In a container, mix rice, cranberries, spinach, flaked almonds and feta together.
  3. To make dressing mix all ingredients together.
  4. Pour over salad.

Cumin & Honey Roasted Carrot Salad Recipe

Serves 10

Approximate cooking time 45 minutescumin and honey

Ingredients:

500g carrot peeled and sliced

1 red onion sliced into eighths

1 tbsp olive oil

2 tsp ground cumin

100g pine nuts

1 tbsp honey

50g mint leaves

120g feta cheese crumbled

Instructions:

  1. Preheat oven to 200⁰C
  2. Prepare carrots and onions.
  3. Toss in oil and ground cumin and place on a baking tray and bake until soft.
  4. Once carrots and onion are cooked, assemble salad in a bowl with pine nuts, honey, mint leaves and feta cheese.
