Christmas Menu Dessert/Snacks Recipes

With Christmas fast approaching, CR Kitchen has put together a menu of festive Christmas menu ideas. Below we have provided some fantastic dessert/snacks recipes you can use this festive season.


Trumps Cranberry Rocky Road Recipe: 

Serve 20

Approximate cooking time: 2 hourstrumps rocky road


120 g slivered almonds

100 g marshmallows

1 cup dried cranberries (Trumps)

1 cup desiccated coconut

80g copha

360 g white chocolate (Nestle)


  1. Line a 23 x 23 cm tin with baking paper.
  2. In a bowl, mix slivered almonds, marshmallows, dried cranberries and coconut.
  3. Melt copha and white chocolate.
  4. Stir into dried mix until everything is well coated.
  5. Spoon into slice tin, press down and refrigerate until set.
  6. Slice into pieces to serve.

Cranberry Dark Chocolate Fudge Bar Recipe: 

Approximate cooking time 1 hour

Serves 20

Ingredients:dark chocolate fudge bar

1 cup dried cranberries

I cup of peanuts

395g condensed milk

80g copha

360g dark chocolate


  1. Line a 23 x 23 cm tin with baking paper.
  2. In a bowl, add cranberries and peanuts.
  3. Add sweetened condensed milk.
  4. Melt copha and chocolate in microwave on high for a minute and stir until copha has melted.
  5. Mix into other ingredients and smooth out in tin.
  6. Place in refrigerator to harden.
  7. Cut into pieces.

Christmas Shortbread Stars Recipe

Makes 36 biscuits

Approximate cooking time 1 hourChristmas shortbread stars


225g butter (Western Star)

140g caster sugar

2 egg yolks

350 plain flour


  1. Preheat oven to 180⁰C and line baking trays.
  2. Beat butter and caster sugar until light and fluffy.
  3. Beat in egg yolks.
  4. Sift in flour and mix until biscuit mix comes together.
  5. Divide the mixture in two and wrap in cling film and place in refrigerator for 30 minutes.
  6. Between two sheets of cling film roll out until about 5mm thick.
  7. Using a star cutter cut into shapes and place on the lined baking tray.
  8. Bake for about 10-15 minutes until lightly golden brown.
