Cheesy Pumpkin Polenta

Cheesy Pumpkin Polenta



A different take on polenta adding the sweetness of pumpkin.

Serve 10

Approximate cooking time – 20 minutes


750g piece pumpkin

1 L (4 cups) water

1 cup (170g) polenta (Trumps)

70g  butter

1 cup grated parmesan cheese


  1. Cut skin off pumpkin and cut into small pieces.
  2. Place the piece of pumpkin in a sauce pan and boil until very soft (or a microwave bowl- put lid on and cook on high for 8 minutes – make sure pumpkin is soft and falling apart).
  3. Heat water until the water boils.
  4. Gradually stir in the polenta with a wooden spoon.
  5. Reduce the heat to low so that polenta is simmering.
  6. Continue to stir for about 10 minutes or until the polenta is thick.
  7. Take the sauce off the heat.
  8. Add the butter, cheese and pumpkin to the polenta.
  9. Stir until smooth.
  10. Season to taste.
  11. Sprinkle with extra cheese.

Serves – as a side dish to meats or a potato replacement.
